Choosing the right method depends on what you want to highlight: tenderness, crispness or intensity of flavour.
Acid, salt and time – the invisible transformers
Not all transformation requires heat. Acid, salt and time can also change ingredients in remarkable ways.
- Acid (from lemon juice, vinegar or yoghurt) can “cook” fish in a ceviche or tenderise meat in a marinade.
- Salt draws out moisture and concentrates flavour – but when used as a brine, it can also make meat juicier.
- Time plays its part in everything from bread proving to cheese ageing and vegetable fermentation. Here, enzymes and microorganisms work slowly but effectively to develop flavour and texture.
